“You don’t win friends with salad,” said that notable philosopher from Springfield, Homer Simpson.
Poor Homer obviously was not on the BRHS COVID Cook-Off page this past week, where he would have seen an abundant cornucopia of heart-warming and friend-winning salads to fill the bellies of even the most ravenous omnivores.
Overwhelmed again by the large number of excellent entries, we gave the unenviable task of picking the winner this week to Admin Support Manager, Katrina Dick.
“It was a tough week to choose, with so many enticing dishes to appreciate,” Katrina said. “This week’s winning recipe is Chickpea Salad by Amy Desmond – for its well-rounded nutritious, colourful but versatile and adaptive dish to what’s available in the crisper/pantry.”
Says Amy – “This is my all-time favourite work lunch! I often replace the pearl cous cous with quinoa but regular cous cous, rice or pasta all work great. The dressing is sooo good, I always have a jar of it made up in the fridge. The roasted chickpeas also make a great snack to keep in the drawer at work.”
Katrina also gave a special shout out to:
- Paula McCombe’s Warm Bean, Zesty Pomegranate and Carrot Salad (“an easy yet sophisticated work meal on the go”)
- Sue Hutton’s Roast Vegetable Salad with Halloumi (“such a well-rounded flavoursome one-plate family winner”)
- Jo Counihan’s Caramelised Onion and Roasted Potato Salad (“great side dish or comforting meal on its own”)
